Make and bake these vibrant and cute rainbow cupcakes with your children at home. A fun surprise treat to brighten any day. These homemade rainbow cupcakes would also make a great food gift for someone special or a loved one, just pop one into a cupcake box or a cellophane bag and tie with a ribbon.
Makes 12 Cupcakes
Ingredients
125g salted butter
125g self raising flour
125g caster sugar
2 eggs
1 tsp vanilla extract
3 tbsp milk
4 bottles food colourings (red, blue, yellow, green)
For the Buttercream Icing
Ingredients
600g icing sugar, sifted
300g unsalted or salted butter, softened
1 tsp vanilla extract
Method to make the buttercream icing
1. Beat the 600g sifted icing sugar, 300g butter and tsp vanilla extract together, add 2-3 tbsp of boiling water beat together until smooth 2. Fill a piping bag with a star nozzle with the buttercream icing and pipe a swirl onto the top of each cupcake
Instructions to make the cupcakes
1. Preheat the oven to 200*C/Gas mark 6
2. Cream the sugar and butter together in a bowl until pale and fluffy 3. Beat the eggs in one at a time, adding a little flour in each time, until the ingredients are mixed 4. Add the vanilla extract, then add the milk 1 tbsp at a time, mixing after each addition 5. Divide the mixture into six individual bowls, in each separate bowl add half a capful of colouring. In bowl 1 add half a capful of red colouring, in bowl 2 add half a capful of red and yellow colouring, in bowl 3 add half a capful of yellow colouring , in bowl 4 add half a capful of green colouring, in bowl 5 add half a capful of blue colouring, in bowl 6 add half a capful of blue and red colouring, mixing colouring into each mixture after adding 6. Divide the purple mixture between the 12 cases. Repeat the other mixtures in this order, blue, green, yellow, orange and red last 7. Bake the 12 cupcakes on a cupcake baking tray in a preheated oven for 10-15 minutes 8. Place on a wire baking tray until completely cool.
9. Finish with the prepared buttercream icing and swirl onto the top of each cupcake.
