Halloween is just right round the corner ,and it’s a great fun time of the year for everyone especially the children.
All getting excited and looking forward to getting dressed up in their Halloween costumes,ready for trick or treating.
A sweet and spooky treat to make on Halloween night a yummy ghost cupcake recipe.
Ingredients makes 12 cupcakes
40g cocoa powder
140g boiling water
40g vegetable oil
170 ml light brown sugar
1 tsp vanilla extract
1 large egg
1 large egg yolk
140 g plain flour
1 tsp bicarbonate soda
pinch of salt
3 large eggs
240g caster sugar
3 tsp liquid glucose
24 chocolate chips
To make the 12 cupcakes
Preheat the oven 160’C
Line the cupcake tray with paper liners
Put the cocoa in a bowl and pour the boiling water over it,mixing together until smooth.
Add the buttermilk,vegetable oil,sugar,vanilla extract and eggs,mixing together until smooth.
In another bowl ,mix together the flour,bicarbonate of soda and salt.
Add this to the liquid ingredients and whisk together to form a smooth mixture.
Divide equally into prepared cupcake cases and bake in a pre heated oven for 15-18 minutes.
Insert a metal skewer in the middle of the cupcake,check it comes out clean and cupcake is baked through.
Allow the cupcakes to cool in their tray for 10 minutes before transferring to a wire rack to cool Completely.
To make the frosting
Place the egg whites ,sugar and the glucose into a glass pyrex bowl and place over a pan of simmering water,whisk together until the sugar has dissolved and the mixture is very warm to the touch.
Remove the Pyrex bowl from the heat and whisk by hand ,briskly until the marshmallow mixture has cooled to room temperature.Scrape the marshmallow mixture into a piping bag,fitted with a large plain nozzle and pipe a high hat swirl onto each cupcake.To finish press two chocolate chips into each swirl of the marshmallow for the spooky ghosts eyes.
