A simply delicious and easy to make blackberry pie squares recipe, perfect for the cold and chilly autumn season ahead. Sweet juicy blackberry filled squares and crumbly buttery pie crust, other kinds of berries available to use like raspberries, strawberries or blueberries. Serve with freshly made hot custard or a scoop of ice cream. A super sweet treat dessert to serve and enjoy with the family.

Ingredients
450 g self raising flour
338 g sugar
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
zest and juice of 1 lemon
225 g unsalted butter, cut into squares
1 large egg
2 tsp vanilla extract
576 g blackberries
4 tsp cornflour
Instructions
1. Preheat the oven to 375F/190C/gas mark 5. Grease lightly a 9 x 13 inch baking tray
2. Lightly grease a 9 x 13 inch baking tray
3. In a food mixer add 225 g self raising flour, lemon zest, add the unsalted butter squares, the egg and vanilla extract, Pulse together
until the dough is crumbly
4. Put half the dough into the bottom of the prepared greased baking tray, saving the remainder for the topping
5. In a bowl stir together the remaining 113 g sugar, cinnamon, cornflour, salt and lemon juice
6. Bake in a preheated oven for around 40 minutes or until the topping becomes a golden brown colour
7. Leave to completely cool before cutting into bite size squares, serve with freshly made custard or a scoop of your favourite ice
