Blueberry Pancakes Recipe

Deliciously light fluffy and fruity blueberry pancakes. serve with fruit and syrup. A simple and easy recipe and the pancakes will make everyone smile.

Makes 10


150g  blueberries

200g self-raising flour

1 tsp baking powder

1 egg

300ml milk

1 knob of butter

1 tsp sunflower oil

Golden or maple syrup 

Fresh whipped cream


1.In a large bowl mix together the self-raising flour, 1 tsp baking powder and a pinch of salt. Beat 1 egg with 300ml milk, add to the dry ingredients and whisk until a thick smooth batter. Beat in a knob of butter and carefully stir in the half the pack of blueberries. In a large non-stick frying pan on medium heat, add a teaspoon of sunflower oil. Add a large tablespoon of the batter into the frying pan makes 3 to 4 pancakes. Cook for about 3 minutes over the medium heat then turn over the pancake for a further 3 minutes until a golden. colour.  Put to one side and make the rest of the pancakes. Serve with golden syrup,  maple syrup or fresh whipped cream and the rest of the blueberries. Enjoy!
