Here is our simple and easy to make carrot cake muffin recipe, they taste and smell delicious and are a perfect surprise sweet treat bake for all your friends and family to enjoy.
Makes 6 (Double the ingredients to make 12 muffins)
1 large carrot, peeled and grated
3 tbsp sultanas
5 tbsp whole meal self raising flour
1/2 tsp baking powder
1/2 tsp ground ginger
1/2 tsp cinnamon
3 tbsp honey
3 tbsp natural yogurt
2 tbsp sunflower oil
For the cream cheese frosting:
4 oz unsalted butter, softened
4 oz soft cheese
1 oz icing sugar, sifted
1 tsp vanilla extract
1. Heat the oven 180C/ 160C Fan / Gas mark 4 and line a muffin tin for 6 cakes.
2. In a mixing bowl place all the ingredients in, stir well until all the grated carrot are well coated with all the ingredients, divide the mixture between the muffin cases.
3. Bake in the oven for 35-40 minutes then remove from the oven and allow to cool on a wire rack.
For the icing frosting:
In a large bowl beat together the butter until really soft then beat in the soft cheese, icing sugar and vanilla extract. Slice the muffins in half and swirl the icing frosting with a cutlery knife over the two halves of the carrot cake muffins, place the two halves of each together and swirl icing frosting on the top of each of the carrot cake muffins. Decorate with a carrot made of orange fondant icing with green fondant stalks. Ready to serve.
