From our friends at Waitrose lets get baking this Easter, with these classic crisp biscuits in the shape of cute Easter bunnies, spring chicks and dainty Easter eggs. These Easter biscuits are a delight to bake, and would make a perfect Easter treat gift to give to friends and family at Eastertime.
Makes 30 biscuits
175g Stork, diced
50g golden caster sugar
50g icing sugar
1 medium egg
1/2 tsp ground mixed spice
300g plain flour, plus extra for rolling
Coloured icing and sprinkles, to decorate
1. Preheat the oven to 180C/gas 4. In a bowl beat together the Stork, golden caster sugar and icing sugar until creamy, then mix in the egg. Add the flour and ground mixed spice and mix together to make a firm dough.
2. On a lightly floured surface roll out the dough to a thickness of 2-3 mm. With the Easter cookie cutters stamp out the biscuits. Transfer to baking sheets that have been lined with non-stick parchment paper. Bake in the oven for 8 – 10 minutes until pale and golden. Leave to cool on the tray then transfer to a wire rack to cool completely.
3. Decorate the biscuits with coloured icing sugar and dust with sprinkles and eave to set. The biscuits can be stored in an airtight container to keep fresh and ready to eat. Wrap several up in coloured tissue paper and give for an Easter gift.
