Autumn is just round the corner when the days and night turn cooler and chilly, there’s nothing more satisfying than a bowl of warm nourishing homemade soup.Who’s ready for a hearty bowl of soup?Here’s a simple and easy recipe to make for everyone to enjoy.
Serves 4
Ingredients
1 tbs olive oil
2 tbs tomato puree
1 medium onion,chopped
2 sticks celery,chopped
25 grams spaghetti twists
50 grams (2 oz) bacon,chopped
400 grams(14 oz)tin of chopped tomatoes
1 large carrot,diced
1 1/2 pint vegetable stock
1 bay leaf’
1/2 tsp dried Oregano
1 tsp dried Basil
1/4 tsp dried Rosemary
1/2 tsp dried garlic granules
Grated Parmesan cheese
1/2 tsp salt,to taste
1/2 tsp black pepper,to taste
Method
In a large saucepan ,heat the olive oil and gently fry the chopped onion,bacon and celery for 10 minutes,until softened.Add the tin of chopped tomatoes,diced carrot,vegetable stock ,herbs,garlic granules and tomato puree, bring to the boil and cover and simmer for 40 minutes, adding the spaghetti twists for the last 15 minutes.Serve and sprinkle Parmesan cheese on top and season with salt and pepper to taste.
