Here is something special to try at home, a vegetable potato curry to make full of flavour and spice. Serve with garlic naans, just simply delicious. Enjoy !
Serves 4
Ingredients
400g jersey royal potatoes, halved
1 onion, chopped
2 garlic cloves, crushed
4 plum tomatoes, chopped
1 180g jar Bombay spice paste
4 tbsp natural yogurt, to serve
Fresh coriander, chopped, to serve
1 red chilli, chopped, to serve
4 tbsp pickled red onions, to serve
Salt and freshly ground black pepper, to season
Instructions
1. Add the potatoes to a pan and cover with water, cook them over a medium heat until tender then drain the water from the pan.
2. In a large frying pan, heat 2 tbsp of oil over a medium heat. When hot add the chopped onion and garlic cook until soft, then add the chopped tomatoes and Bombay spice paste. Cook for 5 minutes to let all the flavours fuse together. Season with salt and freshly ground black pepper.
3. Reduce the heat and add the jersey royal potatoes, stirring to coat in the sauce. Cook until the potaotes are warmed through. Add water if required.
4. In serving dishes divide the potato curry, add on top of each serving natural yogurt, coriander, red chilli and pickled onions, Serve with fresh warm naans.
