Now Mother’s day is fast approaching, here is a the perfect sweet treat recipe to celebrate on Sunday 14th March Mother’s day make these delicious mascarpone and lemon curd thumbprint cookie recipe from our friends at Waitrose.
Serves 20
Ingredients
50g slightly salted butter softened
100g golden caster sugar
200g mascarpone
300g plain flour
Lemon curd
Icing sugar, for light dusting
Instructions
1. Line 2 large baking trays with parchment
2. In a large bowl put 50g slightly salted softened butter and 100g golden caster sugar cream together with a wooden spoon
3. Beat in the 200g mascarpone followed by 300g plain flour and then form a soft ball dough, bringing it together in your hands
4. Divide and roll into 20 balls, then space them out onto the baking trays
5. Press lightly with the palm of your hand to flatten slightly, then use your thumb to make a dip in the centre of each,chill for 15 minutes
6. Preheat te oven to 180*C, Gas mark 4, bake for 20-25 minutes until pale golden, cool on the tray for 5 minutes, then transfer to a wire rack to cool
completely
7. Fill the dip in each cookie with 1/2 teaspoon lemon curd and dust with a little icing sugar
