8 large eggs
115 ml milk
150 g small plum tomatoes
115 g Cheddar cheese, grated
Small handful of fresh flat leaf parsley, chopped
Salt and pepper,to taste.
1.Preheat the oven to 180*C/350*C/Gas Mark 4.grease a muffin tin.
2.In a large bowl, mix the eggs and milk ,season with salt and pepper then stir in the tomatoes, cheese and chopped parsley.Pour the mixture into the 10 holes in the muffin tin, filling almost to the top.
3.Bake for about 15-18 minutes, or until frittatas are puffy, set and starting to turn golden around the edges.Remove from the muffin tin.
Serve with a fresh crisp salad.
