Celebrate Mother’s Day at home and make your Mum smile and feel extra special, by making your own afternoon tea surprise. For your homemade afternoon tea, the most important thing of all -the tea! English breakfast tea or earl grey tea serve in a beautiful bone china teapot and cups & saucers. A selection of dainty sandwiches, homemade scones with jam and clotted cream.You will need for setting the table a white tablecloth, napkins, a cake stand, side plates, bone china teapot, cups & saucers, milk jug & sugar bowl, teaspoons knives and forks. Here are a selection of delicious homemade tea sandwiches egg & watercress, cucumber dill & soft cream cheese, chicken & mayonnaise and smoked salmon.
Instructions
Egg & watercress sandwiches
In a bowl, add hard boiled eggs mash with a fork then add butter, mayonnaise, paprika and chopped watercress, mix and combine together. Spread the mixture onto buttered soft white sliced bread, cut off the crusts and cut into rectangles.
Cucumber Dill & Soft Cream Cheese Sandwiches
In a bowl add the soft cream cheese, chopped dill, lemon zest a pinch of salt, mix and combine together. Spread the soft cream cheese mixture onto slices of soft white bread. Add a layer of paper thin slices of cucumber, cut off the crusts and cut into rectangles.
Chicken & Mayonnaise Sandwiches
Cooked chicken breasts roughly cut into 1 1/2 inch pieces, mix in the mayonnaise and dijon mustard combine together. Add salt and black pepper to taste. Butter sliced soft white bread, add the chicken and mayonnaisemixture and a layer of watercress, cut off the crusts and cut into rectangles.
Smoked Salmon Sandwiches
In a bowl add soft cream cheese, chopped dill, lemon zest and a pinch of salt and combine together. Spread the soft cream cheese mixture onto wholemeal sliced bread. Add layers of paper thin cucumber, then salmon. Cut off the crusts and cut into rectangles.
Scone Recipe
Makes 10 small scones
225g self raising flour
1/2 tsp baking powder
25g caster sugar
55g butter, softened
150ml milk, plus alittle to glaze
Icing sugar to dust
Clotted cream
Strawberry jam
Method
1. Line a baking sheet with parchment, and pre heat the oven 200C.
2. Put the flour, baking powder and sugar in a bowl, add the butter and rub withfingertips until you have a fine breadcrumb texture. Add themilk and stirr until a soft dough forms.
3. On a floured surface, roll the dough gently to about 2 cm thick and use a 5cm fluted cutter, cut as many scones as possible placing them on parchment. Brush the tops with milk and then bake for 12-15 minutes or until golden. Cool on a wire rack, dust with icing sugar and serve with clotted cream and strawberry jam.
