A real classic zesty lemon tart recipe, a perfect special treat to make for Mother’s Day!
250 grams plain flour
150 grams butter,cubed
50 grams icing sugar
4 egg yolks
225 ml double cream
225 grams caster sugar
2 tbsp water
1.Pulse the flour,butter and icing sugar together to resemble breadcrumbs.Add 1 egg yolk and 2 tbsp water and mix together to a dough.Chill for about 20 minutes.
2.Dust the worktop with icing sugar and roll out the pastry to line a 23 cm tin.Chill for 30 minutes.
3.Preheat the oven to 200*C/Fan 180*C/Gas 6.Prick the pastry base,then cover it with baking paper and baking beans.Bake for 15 minutes,remove paper and beans and bake for another 15 minutes until golden.Leave to cool.
4.Turn the oven down to 160*C/Fan 140*C/Gas Mark 3.Whisk the remaining eggs and yolks ,stir in the cream ,caster sugar,and the juice and zest of the lemons.Pour the filling into the pastry case and bake for 40 minutes.
Serve with vanilla ice cream or double cream.
