Bake a batch of these delicious, delicately sweet and nutty flavoured macaroons,they make a perfect sweet treat,dessert or a gift for special occasion.
Serves 20
Ingredients
100 grams icing sugar
100 grams finely ground almonds
2 medium size eggs
pinch of salt
50 grams caster sugar
For the buttercream filling:
100 grams unsalted butter
50 grams icing sugar
2-3 drops vanilla essence
Instructions
1.Sieve the finely ground almonds and icing sugar and mix together
2.In a bowl ,whisk he egg whites until they form soft peaks and start adding the caster sugar slowly little by little
3.Fold the finely ground almonds and the icing sugar into the egg whites,blend together until the mixture is runny
4. Separate into as many bowls as you require to use for the different colours.Add a few drops of food colouring ,or food colour paste
5.Using piping bags ,pipe small circles onto baking paper and leave to rest for at least 1/2 hour
6. Preheat the oven to 150*C,Fan 130*C,Gas 2 and bake for 8 minutes
7.Remove and leave to cool completely before removing
8.For the filling ,whisk the butter (at room temperature)with the icing sugar and vanilla until it’s a soft paste
9.Insert in between 2 macaroon shells,press gently and twist slightly so that the filling covers the whole surface.
