Ingredients
225g unsalted butter, softened
110g caster suger
1 egg
275g plain flour
2 tsp baking powder
1 1/2 tsp vanilla extract
1 1/2 tsp almond extract
1 tsp salt

Instructions
1. Preheat the oven to 190C/170C fan/gas 5
2. In a mixing bowl cream together the softened butter and caster sugar until light and fluffy
3. Add the egg, vanilla extract and almond extract mix well until combined
4. Sift the plain flour, salt and baking powder then add to the dry ingredients mix well until combined
5. Add the sprinkles into the mixture
6. Let the cookie dough rest for a few minutes and bring the mixture together with your hands until it forms a dough
7. Roll out the dough on a lightly floured parchment paper to a thickness of 1/4 inch and cut-out the cookie shapes with a metal cookie cutter
8. Place them on parchment lined baking sheets and bake them in the oven for 7-8 minutes
9. Remove from the oven and leave the cookies to cool on a cooling rack for 15 minutes before serving.
