Raspberry And White Chocolate Summer Traybake Recipe

Serve this special raspberry and white chocolate traybake this Summer, a delicious after tea or picnic dessert sure to delight all your family and friends. This is one of our favourite recipes.

Serves 16


350g salted butter, plus extra for greasing baking tray

400g white caster sugar

6 medium eggs

400g self-raising flour

1 tsp vanilla extract

175g fresh raspberries

150g white  chocolate chips, plus extra for sprinkling 


1.Preheat the oven to 180C/160C/gas mark 4.

2.In a mixing bowl add the caster sugar and butter and beat together until light and fluffy.

3.Add the eggs and vanilla extract and until well combined.

4.Fold in the self-raising flour with a wooden spoon and add the white chocolate chips and combine well. 

5.Pour the batter into a prepared greaseproof  tray.

6.Sprinkle the remaining white chocolate chips on top and also add the raspberries .

7.Bake in the centre of the oven for around 40 minutes until golden brown.

8.Set aside to cool completely, then cut evenly into 16 pieces. Serve.
