Raspberry Cookies Recipe For Red Nose Day

To celebrate Red Nose Day 2019 on March 15, make and bake these delicious raspberry cookies, for your fund raising event at home a worth while cause for Comic Relief,to help families across the UK and abroad live happier and healthier lives.

Makes 30 cookies 


250 grams butter,softened

140 grams caster sugar

1 egg yolk

2 tsp vanilla extract

300 grams plain flour

1 tsp cinnamon

6 tbsp raspberry jam

6 tbsp icing sugar,sifted

icing ,to decorate


1.Mix 250 grams softened butter and 140 grams caster sugar in a large bowl with a wooden spoon,then add 1 egg yolk and 2 tsp vanilla extract and briefly combine.

2.Sift over 300 grams plain flour an 1 tsp cinnamon ,mix together well and then press the dough together.Shape into 2 balls,wrap in cling film and chill for 20-30 minutes.

3 Heat the oven to 180 C/FAN 160 C/Gas 4.Roll out the dough on a lightly floured surface ,then stamp out 28 biscuits with a 7-8 cm wide cutter.Lay these out on a non-stick baking sheets.Using a 4 cm cutter,cut out the ‘noses’ from half the biscuits.Bake for 10-12 minutes until pale golden,then lift onto a cooling  rack.

4.Mix the raspberry jam with the sifted icing sugar.When the biscuits are cool,spoon a little of the jam onto each whole biscuit,then carefully sandwich the other biscuits on top,Serve as they are,or pipe icing,made with a little water,to draw funny faces.
