Summery Vegetable Pasta Recipe

Summery vegetable pasta dish, simple and easy to make perfect for all the family to enjoy.

Serves 2


200g pasta

15g unsalted butter

1 courgette, halved lengthways and sliced

200g cherry tomatoes, halved

1 sweetcorn, kernel stripped

100g sugar snap peas, roughly chopped

2 cloves garlic, crushed

25g basil leaves

35g Greek light cheese, crumbled

salt and freshly ground black pepper, to season


1. In a saucepan add water and salt then bring to the boil and add the pasta. Heat a frying pan on a high heat, once hot, add the butter and stir until completely melted. Add the sliced courgette, tomatoes, sweetcorn and sugar snaps, then saute for 5 minutes, stiring occassionally until golden and tender. Add the garlic and cook for another couple of minutes, then take off the heat. Strain the pasta, keep 50ml of pasta water. Add the pasta and water to the frying pan and stir in well. Season with salt and freshly ground black pepper, shred in the basil leaves and scatter over the pasta, add crumbled Greek light cheese and serve.
