Here is a delicious and easy to make homemade vegetable soup, packed full with healthy vegetables, carrots, leeks, celery and potatoes and delicately flavoured with bouquet garni, mixed herbs and freshly ground black pepper. Serve with freshly baked crusty bread, perfect for the family to enjoy for those chilly days ahead serve for lunch or at suppertime.

Ingredients
50g butter
175g carrots,finely diced
1 large leek, sliced
50g celery, finely diced
25g plain flour
900 mililitre vegetable stock
1 bouquet garni
1 teaspoon mixed herbs
175g potatoes, diced
Sea salt and freshly ground black pepper to season
Instructions
1. Melt the butter in a large saucepan and gently fry the carrots, leeks and celery for around 5 minutes
2. Add the flour and cook for a minute, then gradually blnd the stock. Add the bouquet garni , mixed herbs and season with sea salt
and black pepper
3. Cover and simmer for 25 minutes, or until the soup is to the desired consistency and the vegetables are cooked through
4. Serve with freshly baked crusty bread.
