Easter Cupcake With Cadbury’s Mini Eggs Recipe

A simple fun Easter treat to bake with the children, these cute and adorable Easter cupcakes they will love helping to make and decorate with Cadbury’s mini eggs.

 Ingredients                   Serves 24

325 grams unsalted butter,softened

220 grams caster sugar

225 grams self-raising flour,sifted

3 eggs

1 teaspoon vanilla extract

125 ml milk

450 grams icing sugar,sifted

Cadburys mini eggs to decorate

 

Method

Preheat the oven 190*C,170*C Fan,Gas 5.

Line the cake tray with paper cases.In a food processor place 225 grams butter, caster sugar, flour, eggs, vanilla extract and 60 ml milk.Process until all the mixture is smooth, then divide equally into the paper cases.Place into the oven and bake for 15-20 minutes until risen and golden.

To make the icing, place the icing sugar, remaining 100 grams butter and remaining milk in a bowl  and mix together with an electric mixer.Beat on medium – high speed for about 5 minutes or until the mixture is light and fluffy.From the oven, remove the cupcakes and allow them to cool, then transfer them to a wire rack ,to cool completely.

To ice the cupcakes, place the icing sugar in a piping bag with a star nozzle, Pipe on top of each cupcake and decorate each cupcake on top with Cadburys mini eggs.
